Course Description: Principles of nutrition, diet
therapy, and knowledge of
foods and nutrition as related to human health.
Course Content:

Basic Nutrients - carbohydrates, fats, proteins, vitamins,
minerals and water

Metabolism - energy balance, water balance, digestion and
absorption, weight management, and physical fitness

Nutrition for the Life Cycle - pregnancy, lactation, infancy,
childhood, adolescence, adulthood and the aging

Community Nutrition - food safety, food-borne diseases, food
habits, and cultural patterns

Therapeutic Nutrition - gastrointestinal, coronary heart
disease, hypertension, diabetes mellitus, renal diseases, cancer, AIDS,
surgery and burns
This course is designed for students interested in the medical
field, nursing, kinesiology, education, family and consumer sciences, or
anyone interested in health and fitness.
